January Is National Book Month,
So Get a Book And Start Reading!

The month of January is known as national Book Month. Reading is essential to just about everything in life – from cooking to driving to just getting through school. It is important to start at a young age and teach your child the value of reading so they will grow to practice it often and value their ability to do so.

10 Reasons Why Reading is Important for Kids:

It expands their vocabulary.

2. It helps build independence and self-confidence.

3. It keeps them safe.

4. It helps them make sense of the world around them.

The Reading Mother

Sagas of pirates who scoured the sea,

Cutlasses clenched in their yellow teeth,

"Blackbirds" stowed in the hold beneath.

I had a Mother who read me lays

Of ancient and gallant and golden days;

Stories of Marmion and Ivanhoe,

Which every boy has a right to know.

I had a Mother who read me tales

Of Gelert the hound of the hills of Wales,

True to his trust till his tragic death,

Faithfulness blent with his final breath.

I had a Mother who read me the things

That wholesome life to the boy heart brings--

Stories that stir with an upward touch,

Oh, that each mother of boys were such!

You may have tangible wealth untold;

Caskets of jewels and coffers of gold.

Richer than I you can never be--

I had a Mother who read to me.

This is a projected schedule. Actual dates may vary. The State processes claims on Tuesdays and Thursdays only. Our claim gets submitted on the Tuesday or Thursday right after the 5th. Get your claim in early and checks get out early! All claims are due in office by close of business day (5 PM) on the 5th of each month.


Casseroles Kids will Love!

Cheesy Noodle Bake

(Calculate amounts according to how many children are present)

2 lbs Hamburger Meat

One 16 oz. bag of Extra Wide Egg Noodles

15 oz. of Ricotta Cheese 1 16 oz. of Sour Cream

8 oz. can of Tomato Sauce (Herb)

15 oz. can of Hunts Tomato Sauce original flavor

2 Cups of Shredded Sharp cheese (See below before deciding)

Cook and drain hamburger meat. Then add the sauce's and let simmer. Cook noodles as directed on package. While noodles cook mix the sour cream and ricotta cheese in a bowl. Once noodles are done ,drain ,add to the cheese mixture and combine well. Take a 13 x 9 pan put some of the sauce on bottom layer noodles, the meat sauce and repeat. Top with shredded cheese. Bake in preheated oven at 375 for 25-30 mins. Remove let set 5 minutes.

~On the 2 Cups of Shredded Sharp cheese you may want to add or substitute Mozzarella & Parmesan


Ham and Cheese Bowties

Prep 20 min. Cook 25 min. Ready In 45 min.

8 ounces farfalle (bow tie) pasta 1/4 cup butter

1 clove garlic, minced 1/4 cup all-purpose flour

1/2 teaspoon salt 1/8 teaspoon ground black pepper

2 cups milk 1/2 teaspoon prepared mustard

2 1/2 cups shredded Colby cheese 4 ounces cooked ham, julienned

1/4 cup grated Parmesan cheese

Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

In a large saucepan over medium heat, melt butter. Saute garlic 30 seconds. Whisk in flour, salt and pepper. Cook and stir until smooth. Pour in milk, a little at a time, stirring constantly. Bring to a boil for 1 minute. Stir in mustard and Colby. Continue to cook, stirring occasionally, until cheese is melted. Remove from heat and stir in pasta and ham. Pour into a 2 quart baking dish. Sprinkle with Parmesan. Bake 20 to 25 minutes, until bubbly and golden.

Cowboy Casserole

1 pound ground beef 1/2 onion, chopped

2 red bell peppers, cut into 2 inch pieces 1 (15 ounce) can baked beans

1 tablespoon dry fajita seasoning 1 (8.5 ounce) package corn bread mix

1 egg 1/3 cup milk

Preheat the oven to 350 degrees F (175 degrees C).

Crumble the ground beef into a large cast-iron skillet over medium-high heat. Cook, stirring frequently, until beef is evenly brown. Drain the grease, and add the onion. Cook and stir until the onion is translucent. Add the red peppers, beans, and fajita seasoning; cook and stir until heated through. Spread out in an even layer on the bottom of the skillet. Mix the package of cornbread mix according to the directions using the egg and milk. Spoon over the ground beef mixture, and spread evenly. Place the whole skillet in the oven, and bake for 20 minutes, or until a toothpick inserted into the cornbread layer comes out clean. Cool for a few minutes before serving.
