New Meal Pattern—Begins October 1, 2017
If you have not attended a recent training or have not read any of our newsletters, you maybe totally overwhelmed by the new meal pattern that begins October1, 2017. Here’s a quick cheat sheet to help you understand the new regulations.
Two veggies for lunch or supper, or one fruit and one veggie.
(Two fruits will not be creditable.)New infant age groups. 0-5months, 6mos-12 mos.
Fruits and veggies allowed for infants over 6 months at snack.
No juice for infants, no more than one serving of juice a day for 1 and up.
(already a Texas licensing regulation)At least one serving of whole grains per day.
No grain based desserts.**
Meat or meat alternate can be served for breakfast instead of bread 3 days a week.
Tofu can count as meat alternate.
Serve plain yogurt or yogurt with less than 23 grams of sugar per 6 ounces.
Choose WIC approved, or under 6 grams of sugar per dry ounce cereals.
No flavored milk for under 6.
No deep fat frying on site.
**Grain-based desserts are: cookies, sweet crackers, sweet pie crusts, doughnuts, cereal bars, breakfast bars, granola bars, sweet rolls, pop tarts, cake or brownies. The original requirements stated that graham crackers and animal cookies would not be allowed for reimbursement, however, they have reversed that decision and graham crackers and Animal crackers will be allowed.

Receipts– Please read!!
We are receiving receipts from Kroger this month that just say Springdale Milk. The receipt does not specify if it is whole or Low fat. Please write out to the side what kind of milk it is. Do not highlight or cross out any items on receipts as when you fax them it comes through
Final Workshop 6 hours of Training!
Saturday August 19 Ft. Worth 9am-3pm
This is the last of our workshops for Fiscal year 2017, you must complete at least one training per fiscal year to continue to receive reimbursements after October 1, 2017. Flyer emailed to all.

Creamy Chicken, Bacon and Pea Pasta
(Adjust for larger number of children)
Prep Time: 10 mins Cook Time: 20 mins
INGREDIENTS
3 slices bacon chopped into small pieces 1 pkg pasta of your choice
1 pound chicken breast 1 onion, chopped
1 clove garlic, crushed 1 tsp. dried thyme or dill
1 bag frozen peas 1/2 C. milk
1/2 C. sour cream 1 pkg cr. cheese or plain Greek yogurt
salt and pepper to taste 1/2 C. parmesan cheese, grated
INSTRUCTIONS
Cook pasta according to package directions and dump into colander to drain. Add bacon to pan. Cook on medium heat until crispy. Remove from pan and set aside on plate lined with a paper towel to drain. In same pan with bacon fat, cook chicken on medium heat until no longer pink in center, or to 165 degrees. You can also poke chicken with a fork and if the juices run clear, it’s done. Remove cooked chicken from pan and set aside. Cut up onion and cook in pan on medium heat until tender and translucent. Add garlic, herbs of choice, milk, sour cream (or cream cheese or yogurt), salt, pepper and grated parmesan cheese. Stir and cook until thick and bubbly. Sauce can be thinned with pasta water, chicken stock, water or milk. Add peas and cook until just warmed through. Slice or shred chicken and add to pan. Add pasta and bacon. Stir until mixed well.
Yummy Chicken Fried Rice
Ingredients
2 cups brown rice
4 cups chicken stock
3 T coconut oil
1 chopped onion
4 sliced carrots
1 small diced hot pepper
2 tsp grated ginger
2 cups broccoli, cut up 1 1/2 cup leftover shredded chicken
4 beaten eggs . bag frozen peas, thawed
4 cloves garlic 4 T. soy sauce
Place rice and stock in saucepan and cook according to directions. In a skillet, put coconut oil, onion, carrots, hot pepper, and ginger. Cook until ingredients are tender. Add broccoli, chicken, and eggs. Cook and stir until eggs are done. Add peas, garlic crushed, and soy sauce. Cook and stir one minute longer.

3. Health Department Certificate (current) Submit Annually
4. Proof of license renewal must be submitted annually.
DAILY DUTIES
Menu what foods are served, the quantity that is served (meal production record) AT POINT OF SERVICE!
Meal Counts who is in attendance and receiving the meal.
AT POINT OF SERVICE! (Attendance must be taken once child is seated and served the meal AND before the child leaves the table) Print off attendance records from Minute Menu to have posted at each meal service area.
Enrollment Forms /MBIE FORMS completed when new children enroll.
MUST INCLUDE:
Child’s Name/D.O.B , Food stamps case number (EDG #)
All names of household (if there is no Food Stamp number)
Household income –specify frequency of pay
Signature and Social Sec. # and current date!!
WEEKLY DUTIES
Enrollment update Check your Minute menu DASHBOARD that lists new enrollments and expired enrollments by date.
Receipts. Send in DAILY or WEEKLY. You cannot check your Milk Audit if we do not have receipts logged in. Write your Center name on the receipts.
END OF MONTH

All Outstanding Receipts
All Pending /Expired Home Enrollments and Income Forms

Alert!! KidKare -Minute Menu
All providers who use the current Minute Menu HX program will be required to convert over to KidKare before October 1, as the current program will no longer work after that. We are converting providers over on all our monitor visits. If you have not done so yet. I will be sending out letters this month to those of you who have not switched over yet so that you may get this done. Please call the office if you would like to switch over immediately.
